Ingredients

- 2 cups strawberries, sliced
- 2 cups rhubarb, chopped
- 1 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup butter, melted
- 1/2 teaspoon cinnamon
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix strawberries, rhubarb, granulated sugar, cornstarch, and vanilla extract.
- Spread the fruit mixture in a baking dish.
- In another bowl, combine oats, flour, brown sugar, butter, and cinnamon.
- Spread the oat mixture over the fruit.
- Bake for 35-40 minutes until golden brown.
- Let it cool before serving.
Notes
- Serve warm with ice cream.
- Store leftovers in the refrigerator.
- Adjust sugar based on the tartness of rhubarb.
