Delicious strawberry rhubarb crumb bars with a buttery crust and crumbly topping.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, softened
- 1 cup strawberries, chopped
- 1 cup rhubarb, chopped
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, oats, brown sugar, and butter until crumbly.
- Press half of the mixture into the bottom of a greased baking dish.
- In another bowl, combine strawberries, rhubarb, granulated sugar, cornstarch, and vanilla.
- Spread the fruit mixture over the crust in the baking dish.
- Sprinkle the remaining crumb mixture on top.
- Bake for 35-40 minutes or until golden brown.
- Let cool before cutting into bars.
Notes
- Store bars in an airtight container.
- Best enjoyed within a week.
- Can be served warm or cold.
