- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 2 cups fresh strawberries, sliced
- 1/4 cup strawberry jam
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
- In a mixer, beat cream cheese and sugar until smooth. Add vanilla and mix well.
- Incorporate eggs one at a time, mixing thoroughly after each addition.
- Fold in sour cream until fully combined.
- Pour the cheesecake mixture over the crust in the springform pan.
- Bake for 50-60 minutes, or until the center is set but slightly jiggly.
- Let the cheesecake cool in the oven with the door ajar for 1 hour.
- Chill in the refrigerator for at least 4 hours or overnight.
- Top with sliced strawberries and drizzle with strawberry jam before serving.
Notes
- For a firmer cheesecake, bake an additional 10 minutes.
- You can substitute raspberries or blueberries for strawberries.
- Consider adding a layer of whipped cream on top for extra decoration.
