A creative twist on traditional sushi using strawberries and cake.
Ingredients

- 2 cups sushi rice
- 2 1/2 cups water
- 1/4 cup sugar
- 1/4 cup rice vinegar
- 1 teaspoon vanilla extract
- 1 cup whipped cream
- 1 pound fresh strawberries, sliced
- 1 package of thin sponge cake
- 1/4 cup powdered sugar
Instructions
- Rinse the sushi rice under cold water until clear.
- Combine rice and water in a pot and bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes.
- Remove from heat and let sit for 10 minutes.
- Mix sugar, rice vinegar, and vanilla extract into the rice.
- Spread the rice on a sheet of plastic wrap.
- Layer sponge cake over the rice.
- Add whipped cream and sliced strawberries on top.
- Roll the sushi tightly using the plastic wrap.
- Slice into pieces and dust with powdered sugar before serving.

- Serve chilled for best flavor.
