A delicious stuffed baked acorn squash recipe filled with savory ingredients.
Ingredients
Scale
- 2 acorn squashes
- 1 cup cooked quinoa
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1/2 cup diced red bell pepper
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro
- 1/2 cup shredded cheese (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the acorn squashes in half and scoop out the seeds.
- Place the squashes cut-side down on a baking sheet and roast for 25 minutes.
- In a bowl, mix quinoa, black beans, corn, bell pepper, cumin, chili powder, salt, and pepper.
- Remove the squashes from the oven and flip them cut-side up.
- Stuff each squash half with the quinoa mixture.
- If using, sprinkle cheese on top of the stuffing.
- Return to the oven and bake for an additional 15-20 minutes.
- Garnish with cilantro and serve warm.
Notes
- Adjust spices to your taste.
- Can substitute quinoa with rice or other grains.
- Make this dish vegan by omitting cheese.
