- 4 boneless, skinless chicken breasts
- 1 cup spinach, chopped
- 1/2 cup cream cheese, softened
- 1/2 cup feta cheese, crumbled
- 1/4 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat your air fryer to 375°F (190°C).
- In a bowl, mix spinach, cream cheese, feta, sun-dried tomatoes, garlic, Italian seasoning, salt, and pepper.
- Use a sharp knife to create a pocket in each chicken breast.
- Stuff each pocket with the spinach mixture.
- Brush the outside of each chicken breast with olive oil.
- Place the stuffed chicken in the air fryer basket in a single layer.
- Cook for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 5 minutes before slicing.
Notes
- For added flavor, marinate the chicken in lemon juice and herbs for 30 minutes before stuffing.
- Consider using different cheeses like mozzarella or goat cheese for variation.
- Serve with a side of roasted vegetables or a fresh salad for a complete meal.
