  • 1 cup cooked rice
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/4 cup dried cranberries
  • 1/4 cup almonds, chopped
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon dried thyme

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, melt butter over medium heat and sauté onion and celery until soft.
  3. In a bowl, combine cooked rice, sautéed vegetables, cranberries, almonds, salt, pepper, and thyme.
  4. Stuff each Cornish game hen with the rice mixture.
  5. Place the hens in a baking dish and cover with foil.
  6. Bake for 45 minutes, then remove the foil and bake for an additional 15 minutes until golden brown.
  7. Let rest for 10 minutes before serving.
