Ingredients

  • 1 cup cooked quinoa
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or fresh
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the delicata squashes in half lengthwise and scoop out the seeds.
  3. Place the squash halves cut-side down on a baking sheet.
  4. Roast for 25-30 minutes until tender.
  5. In a bowl, mix quinoa, black beans, corn, cumin, chili powder, salt, and pepper.
  6. Fill each squash half with the mixture.
  7. Top with cheese if desired.
  8. Return to the oven and bake for an additional 10 minutes.
  9. Serve warm.
