Instructions
- Prepare the swamp potatoes by peeling and dicing them.
- In a crockpot, add the diced swamp potatoes.
- Pour in the vegetable broth and olive oil.
- Season with salt, pepper, garlic powder, and onion powder.
- Mix well to ensure potatoes are coated.
- Cover and cook on low for 6-8 hours or until tender.
- Garnish with chopped green onions before serving.
