- 2 lbs chicken breast
- 1 cup pineapple chunks
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1/4 cup ketchup
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1/2 cup diced bell pepper
- 1/4 cup green onions for garnish
Instructions
- Place chicken breasts at the bottom of the crockpot.
- Add pineapple chunks, soy sauce, brown sugar, ketchup, garlic, and ginger.
- Stir to combine the ingredients.
- Top with diced bell pepper.
- Cover and cook on low for 6-7 hours or until chicken is cooked through.
- Shred the chicken with two forks and mix well.
- Serve hot, garnished with green onions.
