Ingredients

- 2 medium sweet potatoes, diced
- 1 cup cooked brown rice
- 1 can black beans, rinsed and drained
- 1 cup corn, frozen or canned
- 1 avocado, sliced
- 1/2 cup salsa
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Toss sweet potatoes with olive oil, cumin, chili powder, salt, and pepper.
- Spread sweet potatoes on a baking sheet and roast for 25 minutes.
- In a bowl, layer the brown rice, black beans, corn, roasted sweet potatoes, and avocado.
- Top with salsa and garnish with fresh cilantro.
- Serve immediately.
