- 2 cups mashed sweet potatoes
- 1 cup sugar
- 1/2 cup brown sugar
- 1/2 cup butter, softened
- 3 eggs
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1 cup milk
- 1 cup chopped pecans (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix the mashed sweet potatoes, sugar, brown sugar, and butter until smooth.
- Add eggs and vanilla extract, and mix well.
- In another bowl, combine flour, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the sweet potato mixture, alternating with milk.
- Fold in chopped pecans if using.
- Pour the batter into a greased cake pan.
- Bake for 35-40 minutes or until a toothpick comes out clean.
- Let it cool before serving.
Notes
- Store leftovers in an airtight container.
- This cake can be served warm or at room temperature.
- Top with cream cheese frosting for extra sweetness.
