  • 1 cup milk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the mashed sweet potatoes, sugar, brown sugar, and butter until smooth.
  3. Add eggs and vanilla extract, and mix well.
  4. In another bowl, combine flour, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the sweet potato mixture, alternating with milk.
  6. Fold in chopped pecans if using.
  7. Pour the batter into a greased cake pan.
  8. Bake for 35-40 minutes or until a toothpick comes out clean.
  9. Let it cool before serving.
