Ingredients

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced sweet potatoes and cook until tender, about 10 minutes.
  3. Stir in chopped onion and bell pepper, cooking until softened.
  4. Season with salt, pepper, and paprika.
  5. Make four wells in the mixture and crack an egg into each well.
  6. Cover and cook until eggs are set, about 5 minutes.
  7. Serve warm.
