Ingredients

- 2 medium sweet potatoes, diced
- 4 large eggs
- 1 tablespoon olive oil
- 1 small onion, chopped
- 1 bell pepper, diced
- Salt, to taste
- Pepper, to taste
- 1 teaspoon paprika
Instructions
- Heat olive oil in a skillet over medium heat.
- Add diced sweet potatoes and cook until tender, about 10 minutes.
- Stir in chopped onion and bell pepper, cooking until softened.
- Season with salt, pepper, and paprika.
- Make four wells in the mixture and crack an egg into each well.
- Cover and cook until eggs are set, about 5 minutes.
- Serve warm.
Notes
- You can add spinach or other vegetables for extra nutrition.
- For a spicier dish, add jalapeños.
- This dish can be made ahead and reheated.
