A delicious sweet potato casserole perfect for Thanksgiving.
Ingredients

- 4 large sweet potatoes
- 1/2 cup brown sugar
- 1/2 cup butter
- 1/2 cup milk
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/2 cup mini marshmallows
Instructions
- Preheat the oven to 350°F (175°C).
- Pierce sweet potatoes with a fork and bake for 45 minutes.
- Peel and mash the sweet potatoes in a bowl.
- Add brown sugar, butter, milk, eggs, vanilla, and cinnamon. Mix well.
- Transfer the mixture to a greased baking dish.
- Top with mini marshmallows.
- Bake for an additional 25 minutes.
Notes
- For a crunchier topping, broil for a few minutes after baking.
- Can be prepared a day in advance and baked before serving.
