  • 1 packet taco seasoning
  • 1 can (15 ounces) black beans, drained and rinsed

  • 2 cups shredded cheddar cheese
  • 1 cup corn kernels (fresh or frozen)
  • 2 cups salsa
  • 1/2 cup chopped green onions
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned, about 5-7 minutes.
  4. Stir in taco seasoning, black beans, diced tomatoes, corn, and salsa. Cook for an additional 5 minutes.
  5. Combine the cooked pasta with the beef mixture in the skillet. Mix well.
  6. Transfer the mixture to a greased 9×13 inch baking dish.
  7. Top with shredded cheddar cheese.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
  9. Remove from oven and let it rest for 5 minutes before serving.
  10. Garnish with chopped green onions before serving.
