- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 can black beans, drained
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes

- 1 avocado, diced

- 1/4 cup chopped cilantro
Instructions
- Cook rice according to package instructions.
- In a skillet, brown the ground meat over medium heat.
- Add taco seasoning and follow package instructions.
- Stir in black beans and corn until heated through.
- In a bowl, layer rice, meat mixture, tomatoes, and cheese.
- Top with avocado, sour cream, and cilantro.
