Ingredients

  • 2 eggs, lightly beaten

Instructions

  1. Soak tapioca pearls in water for 30 minutes.
  2. In a pot, combine milk, sugar, and salt. Bring to a simmer.
  3. Add soaked tapioca pearls to the pot. Cook for 15 minutes, stirring frequently.
  4. Slowly add the beaten eggs, stirring constantly.
  5. Cook for an additional 5 minutes until thickened.
  6. Stir in vanilla extract and remove from heat.
  7. Cool the pudding before serving.
