A hearty tater tot breakfast casserole perfect for any morning.
Ingredients

- 1 bag of frozen tater tots (32 oz)
- 8 large eggs
- 1 cup milk
- 2 cups shredded cheddar cheese
- 1 pound breakfast sausage, cooked and crumbled
- 1/2 cup diced onion
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, cook the sausage and onion until browned.
- In a bowl, whisk together eggs, milk, salt, and pepper.
- Grease a 9×13 inch baking dish.
- Spread half of the tater tots in the bottom of the dish.
- Top with cooked sausage and onion mixture.
- Pour egg mixture over the top.
- Sprinkle cheddar cheese over the egg mixture.
- Layer remaining tater tots on top.
- Bake for 45 minutes or until egg is set and tater tots are golden.
Notes
- Customize with your favorite vegetables.
- Can be prepared the night before and baked in the morning.
- Store leftovers in the refrigerator for up to 3 days.
