Description
A delicious dish of beef enchiladas with a Tex-Mex flair.
Ingredients

- 1 lb ground beef
- 1 cup chopped onion
- 2 cloves garlic, minced
- 1 can (10 oz) enchilada sauce
- 1 cup shredded cheese
- 8 corn tortillas
- 1 tsp cumin
- 1 tsp chili powder
- Salt to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook ground beef, onion, and garlic over medium heat until beef is browned.
- Add cumin, chili powder, and salt. Mix well.
- Pour half of the enchilada sauce into a baking dish.
- Fill tortillas with the beef mixture and roll them up.
- Place rolled tortillas seam-side down in the baking dish.
- Pour remaining enchilada sauce over the top.
- Sprinkle cheese on top.
- Bake for 20-25 minutes until cheese is melted.
Notes
- Serve with sour cream or guacamole.
- Can substitute ground turkey for beef.
- Use flour tortillas for a different texture.
