Description

A delicious dish of beef enchiladas with a Tex-Mex flair.


Ingredients

  • 1 lb ground beef
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 1 cup shredded cheese
  • 8 corn tortillas
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook ground beef, onion, and garlic over medium heat until beef is browned.
  3. Add cumin, chili powder, and salt. Mix well.
  4. Pour half of the enchilada sauce into a baking dish.
  5. Fill tortillas with the beef mixture and roll them up.
  6. Place rolled tortillas seam-side down in the baking dish.
  7. Pour remaining enchilada sauce over the top.
  8. Sprinkle cheese on top.
  9. Bake for 20-25 minutes until cheese is melted.

Notes

  • Serve with sour cream or guacamole.
  • Can substitute ground turkey for beef.
  • Use flour tortillas for a different texture.
