Ingredients

- 2 medium sweet potatoes, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 avocado, sliced (for serving)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the diced sweet potatoes and cook until slightly tender, about 5-7 minutes.
- Stir in the onion, garlic, and bell peppers. Cook for another 5 minutes.
- Add cumin, chili powder, salt, and pepper. Stir well.
- Cook until sweet potatoes are fully tender, about 10-15 minutes.
- Serve hot, topped with avocado slices.

- Feel free to add cooked beans for extra protein.
