Ingredients

  • 1 cup unsalted butter
  • 4 large eggs
  • 1 cup milk
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • ½ tsp salt
  • 1 cup pumpkin puree
  • 1 tsp cinnamon
  • ½ tsp nutmeg

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a bowl, cream the butter and sugar until light.
  4. Add eggs one at a time, mixing well.
  5. Stir in milk and vanilla.
  6. In another bowl, mix flour, baking powder, salt, cinnamon, and nutmeg.
  7. Add dry ingredients to wet mixture, alternating with pumpkin puree.
  8. Pour batter into prepared pans.
  9. Bake for 30-35 minutes or until a toothpick comes out clean.
  10. Let cool before removing from pans.
  11. Frost as desired.

Notes

  • Can substitute pumpkin puree with applesauce.
  • Use cream cheese frosting for extra flavor.
  • Add nuts for texture if desired.
