A festive cake to celebrate Thanksgiving and birthdays.
Ingredients

- 2 cups all-purpose flour
- 1 ½ cups sugar
- 1 cup unsalted butter
- 4 large eggs
- 1 cup milk
- 2 tsp baking powder
- 1 tsp vanilla extract
- ½ tsp salt
- 1 cup pumpkin puree
- 1 tsp cinnamon
- ½ tsp nutmeg
Instructions
- Preheat the oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
- In a bowl, cream the butter and sugar until light.
- Add eggs one at a time, mixing well.
- Stir in milk and vanilla.
- In another bowl, mix flour, baking powder, salt, cinnamon, and nutmeg.
- Add dry ingredients to wet mixture, alternating with pumpkin puree.
- Pour batter into prepared pans.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let cool before removing from pans.
- Frost as desired.
Notes
- Can substitute pumpkin puree with applesauce.
- Use cream cheese frosting for extra flavor.
- Add nuts for texture if desired.
