A delicious and healthy Thanksgiving dish featuring roasted butternut squash.
Ingredients

- 1 medium butternut squash, peeled and cubed
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon cinnamon
- 1/4 cup maple syrup
- 1/2 cup walnuts, chopped
- 2 tablespoons fresh thyme, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the butternut squash with olive oil, salt, pepper, and cinnamon.
- Spread the squash on a baking sheet in a single layer.
- Roast for 25-30 minutes or until tender.
- Drizzle with maple syrup and sprinkle with walnuts and thyme.
- Return to the oven for an additional 5 minutes.
- Serve warm.

- Adjust spices to your preference.
- Use pecans instead of walnuts if desired.
- This dish can be made ahead and reheated.
