Ingredients

- 2 pounds of carrots, peeled and cut into chunks
- 1/4 cup of brown sugar
- 1/4 cup of butter, melted
- 1 teaspoon of cinnamon
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 cup of chopped fresh parsley for garnish
Instructions
- Place the carrots in the crockpot.
- In a bowl, mix brown sugar, melted butter, cinnamon, salt, and black pepper.
- Pour the mixture over the carrots and toss to coat.
- Cover and cook on low for 6 hours or until the carrots are tender.
- Garnish with fresh parsley before serving.
Notes
- Adjust the sweetness by adding more or less brown sugar.
- You can add other vegetables like parsnips for variety.
- For a vegan option, use maple syrup instead of brown sugar and coconut oil instead of butter.
