Ingredients

- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup pumpkin puree
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
- In another bowl, beat cream cheese until smooth. Add sugar and vanilla, mix well.
- Add eggs one at a time, mixing well after each addition.
- Stir in pumpkin puree, pumpkin pie spice, and salt.
- Pour filling over the crust in the springform pan.
- Bake for 60 minutes or until the center is set.
- Let it cool, then refrigerate for at least 4 hours before serving.
Notes
- Use room temperature ingredients for better mixing.
- Top with whipped cream or caramel sauce for extra flavor.
- Store leftovers in the refrigerator.
