A collection of cold side dishes perfect for Thanksgiving.
Ingredients
Scale
- 2 cups of mixed greens
- 1 cup of cherry tomatoes, halved
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/2 cup of feta cheese, crumbled
- 1/4 cup of olives, pitted and sliced
- 1/4 cup of olive oil
- 2 tablespoons of balsamic vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
- In a separate small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
