Ingredients

- 4 cups of diced potatoes
- 1 cup of chopped onions
- 2 cups of vegetable broth
- 1 cup of heavy cream
- 1 teaspoon of garlic powder
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 cup of shredded cheddar cheese
Instructions
- Combine the diced potatoes and chopped onions in the crockpot.
- Add the vegetable broth, heavy cream, garlic powder, salt, and black pepper.
- Stir well to mix all ingredients.
- Cover and cook on low for 6-7 hours or until potatoes are tender.
- Stir in the shredded cheddar cheese before serving.
Notes
- Adjust seasoning to taste.
- Can add cooked bacon for extra flavor.
- For a lighter version, use low-fat cream.
