- 1 cup almond milk
- 1 cup coconut cream
- 1 cup pumpkin puree
- 1/2 cup maple syrup
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 1/4 cup cornstarch
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix almond milk, coconut cream, pumpkin puree, maple syrup, and vanilla extract.
- Add cinnamon, nutmeg, and salt to the mixture.
- In a separate bowl, mix cornstarch with a little water to create a slurry.
- Combine the slurry with the pumpkin mixture and stir until smooth.
- Pour the mixture into a pie crust.
- Bake for 45 minutes or until set.
- Let cool before serving.
Notes
- Use a pre-made dairy-free pie crust for convenience.
- Serve with dairy-free whipped cream if desired.
- Can be made a day in advance.
