- 1 turkey breast (5–7 lbs)
- 2 tablespoons olive oil
- 1 tablespoon salt
- 1 teaspoon black pepper
- 2 cups mixed vegetables (carrots, celery, onion)
- 1 cup chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon rosemary
- 1 cup cranberry sauce
Instructions
- Preheat your oven to 350°F (175°C).
- Rub the turkey with olive oil, salt, and pepper.
- Place mixed vegetables in a roasting pan.
- Put the turkey on top of the vegetables.
- Pour chicken broth into the pan.
- Sprinkle thyme and rosemary over the turkey.
- Roast for about 1.5 to 2 hours or until the internal temperature reaches 165°F (74°C).
- Let it rest for 20 minutes before carving.
- Serve with cranberry sauce.
