A savory and festive roasted duck for Thanksgiving.


Ingredients

  • 1 whole duck (45 pounds)
  • 2 oranges, quartered
  • 1 onion, quartered
  • 4 cloves garlic, minced
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh thyme
  • 1 tablespoon olive oil
  • 1 cup chicken broth

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Rinse the duck and pat it dry with paper towels.
  3. Season the duck with salt, pepper, and thyme inside and out.
  4. Stuff the cavity with oranges, onion, and garlic.
  5. Rub the outside with olive oil.
  6. Place the duck on a roasting pan breast side up.
  7. Pour chicken broth into the bottom of the pan.
  8. Roast for about 2 hours, basting every 30 minutes.
  9. Check the internal temperature; it should reach 165°F (74°C).

Notes

  • Let the duck rest for 15 minutes before carving.
  • Serve with your favorite sides.
