- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup chopped onions
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, bring vegetable broth to a boil.
- Add quinoa and reduce heat. Cover and simmer for 15 minutes.
- In a separate pan, sauté carrots, celery, and onions until soft.
- Add cooked quinoa to the vegetable mix.
- Season with thyme, garlic powder, salt, and pepper.
- Stir well and serve warm.
Notes
- This dish can be made ahead of time.
- Store leftovers in an airtight container.
