Description

A fresh and healthy Thanksgiving kale salad.


Ingredients

Scale
  • 1 bunch of kale, chopped
  • 1 cup of shredded carrots
  • 1/2 cup of dried cranberries
  • 1/2 cup of walnuts, chopped
  • 1/4 cup of feta cheese, crumbled
  • 1/4 cup of olive oil
  • 2 tablespoons of apple cider vinegar
  • 1 tablespoon of honey
  • Salt and pepper to taste

Instructions

  1. Wash and chop the kale.
  2. In a large bowl, combine kale, carrots, cranberries, walnuts, and feta.
  3. In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Let the salad sit for 10 minutes before serving.

Notes

  • Adjust sweetness by adding more or less honey.
  • This salad can be made a day in advance; just add the dressing before serving.
  • Feel free to add other toppings like avocado or grilled chicken.
