Description
A fresh and healthy Thanksgiving kale salad.
Ingredients
Scale
- 1 bunch of kale, chopped
- 1 cup of shredded carrots
- 1/2 cup of dried cranberries
- 1/2 cup of walnuts, chopped
- 1/4 cup of feta cheese, crumbled
- 1/4 cup of olive oil
- 2 tablespoons of apple cider vinegar
- 1 tablespoon of honey
- Salt and pepper to taste
Instructions
- Wash and chop the kale.
- In a large bowl, combine kale, carrots, cranberries, walnuts, and feta.
- In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Let the salad sit for 10 minutes before serving.
Notes
- Adjust sweetness by adding more or less honey.
- This salad can be made a day in advance; just add the dressing before serving.
- Feel free to add other toppings like avocado or grilled chicken.
