Ingredients

  • 1 whole turkey (1214 pounds)
  • 1/2 cup unsalted butter, softened
  • 2 tablespoons salt
  • 1 tablespoon black pepper
  • 2 cups chicken broth
  • 1 onion, quartered
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Remove the turkey giblets and pat the turkey dry with paper towels.
  3. Rub the softened butter all over the turkey.
  4. Season with salt and pepper inside and out.
  5. Stuff the cavity with onion, carrots, celery, rosemary, and thyme.
  6. Place the turkey in a roasting pan and pour chicken broth around it.
  7. Cover with foil and roast for 2-2.5 hours.
  8. Remove the foil and roast for an additional 30-60 minutes until the skin is golden brown.
  9. Check the internal temperature; it should reach 165°F (75°C).
  10. Let the turkey rest for 20 minutes before carving.
