A classic Thanksgiving pie with a rich filling and flaky crust.
Ingredients

- 1 pie crust
- 2 cups pumpkin puree
- 1 cup heavy cream
- 3/4 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 425°F (220°C).
- Roll out the pie crust and place it in a pie dish.
- In a bowl, mix pumpkin puree, heavy cream, sugar, eggs, vanilla, and spices.
- Pour the filling into the pie crust.
- Bake for 15 minutes, then reduce the temperature to 350°F (175°C).
- Bake for an additional 40-45 minutes, or until set.
- Let the pie cool before serving.
Notes
- Serve with whipped cream.
- Can be made a day in advance.
- Store leftovers in the refrigerator.
