Ingredients
- Turkey – 1 whole (12-14 lbs)
- Butter – 1 cup, softened
- Garlic – 4 cloves, minced
- Salt – 2 tablespoons
- Pepper – 1 tablespoon
- Fresh rosemary – 2 tablespoons, chopped
- Fresh thyme – 2 tablespoons, chopped
- Fresh sage – 2 tablespoons, chopped
- Onions – 2, quartered
- Carrots – 4, chopped
- Celery – 4 stalks, chopped
- Chicken broth – 4 cups
Instructions
- Preheat your oven to 325°F (165°C).
- In a bowl, mix butter, garlic, salt, pepper, rosemary, thyme, and sage.
- Rub the butter mixture under the skin of the turkey.
- Stuff the turkey cavity with onions, carrots, and celery.
- Place the turkey in a roasting pan and pour chicken broth around it.
- Cover the turkey with aluminum foil.
- Roast for 2.5 to 3 hours or until the internal temperature reaches 165°F (75°C).
- Remove the foil in the last 30 minutes for browning.
- Let the turkey rest for 20 minutes before carving.

- Use a meat thermometer for accurate cooking.
- Brining the turkey overnight enhances flavor.
- Save the bones for making stock.
