  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, heat olive oil over medium heat.
  3. Add onion and garlic; sauté until translucent.
  4. Add quinoa and toast for 2 minutes.
  5. Pour in vegetable broth; bring to a boil.
  6. Add cranberries and pecans; reduce heat to low.
  7. Cover and simmer for 15 minutes.
  8. Fluff with a fork and season with salt and pepper.

Notes

  • Can substitute walnuts for pecans.
