Ingredients

- 2 cups of quinoa
- 1 cup of cranberries
- 1 cup of pecans
- 2 cups of vegetable broth
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tablespoon of olive oil
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, heat olive oil over medium heat.
- Add onion and garlic; sauté until translucent.
- Add quinoa and toast for 2 minutes.
- Pour in vegetable broth; bring to a boil.
- Add cranberries and pecans; reduce heat to low.
- Cover and simmer for 15 minutes.
- Fluff with a fork and season with salt and pepper.
Notes
- Can substitute walnuts for pecans.
- Great as a side dish or main course.
- Leftovers can be stored in the fridge for up to 3 days.
