A delicious vegetarian thanksgiving recipe that everyone will love.
Ingredients

- 2 cups of quinoa
- 4 cups of vegetable broth
- 1 cup of cranberries
- 1 cup of chopped pecans
- 1 cup of diced celery
- 1 cup of diced carrots
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon of dried thyme
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
Instructions
- Rinse the quinoa under cold water.
- In a pot, bring vegetable broth to a boil.
- Add quinoa and reduce heat to low. Cover and simmer for 15 minutes.
- In a skillet, sauté onion, garlic, celery, and carrots until soft.
- Add cranberries, pecans, thyme, salt, and pepper to the skillet.
- Combine the quinoa with the vegetable mixture.
- Serve warm.
Notes
- Can be made a day ahead and reheated.
- Add other vegetables as desired.
- Substitute nuts with seeds for nut-free version.
