Description

A delicious vegetarian thanksgiving recipe that everyone will love.


Ingredients

  • 2 cups of quinoa
  • 4 cups of vegetable broth
  • 1 cup of cranberries
  • 1 cup of chopped pecans
  • 1 cup of diced celery
  • 1 cup of diced carrots
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of dried thyme
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, bring vegetable broth to a boil.
  3. Add quinoa and reduce heat to low. Cover and simmer for 15 minutes.
  4. In a skillet, sauté onion, garlic, celery, and carrots until soft.
  5. Add cranberries, pecans, thyme, salt, and pepper to the skillet.
  6. Combine the quinoa with the vegetable mixture.
  7. Serve warm.

Notes

  • Can be made a day ahead and reheated.
  • Add other vegetables as desired.
  • Substitute nuts with seeds for nut-free version.
