Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine Brussels sprouts, carrots, and red bell pepper.
- Drizzle with olive oil and sprinkle with salt, pepper, garlic powder, and thyme.
- Toss to coat the vegetables evenly.
- Spread vegetables on a baking sheet in a single layer.
- Roast for 25-30 minutes or until tender and slightly caramelized.
- Serve warm.
