Ingredients

  • 1/2 cup olive oil
  • 1/4 cup salt
  • 1/4 cup black pepper
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 1 tablespoon paprika
  • Wood chips (hickory or applewood)

Instructions

  1. Brine the turkey overnight in a saltwater solution.
  2. Pat the turkey dry with paper towels.
  3. Rub olive oil over the turkey.
  4. In a bowl, mix salt, pepper, garlic powder, onion powder, and paprika.
  5. Rub the spice mixture all over the turkey.
  6. Prepare your smoker according to the manufacturer’s instructions.
  7. Add soaked wood chips to the smoker.
  8. Place the turkey in the smoker and cook for 30 minutes per pound at 225°F.
  9. Check the internal temperature; it should reach 165°F in the thickest part.
  10. Remove the turkey and let it rest for 30 minutes before carving.
