Delicious smoked turkey for Thanksgiving.
Ingredients

- 1 whole turkey (12–14 lbs)
- 1/2 cup olive oil
- 1/4 cup salt
- 1/4 cup black pepper
- 2 tablespoons garlic powder
- 2 tablespoons onion powder
- 1 tablespoon paprika
- Wood chips (hickory or applewood)
Instructions
- Brine the turkey overnight in a saltwater solution.
- Pat the turkey dry with paper towels.
- Rub olive oil over the turkey.
- In a bowl, mix salt, pepper, garlic powder, onion powder, and paprika.
- Rub the spice mixture all over the turkey.
- Prepare your smoker according to the manufacturer’s instructions.
- Add soaked wood chips to the smoker.
- Place the turkey in the smoker and cook for 30 minutes per pound at 225°F.
- Check the internal temperature; it should reach 165°F in the thickest part.
- Remove the turkey and let it rest for 30 minutes before carving.
Notes
- You can inject the turkey with marinade for added flavor.
- Keep the smoker closed as much as possible to maintain temperature.
- Use a meat thermometer for accuracy.
