Ingredients

  • 4 medium sweet potatoes
  • 1/2 cup brown sugar
  • 1/4 cup butter
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup mini marshmallows

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Pierce the sweet potatoes with a fork and bake for 45 minutes.
  3. Remove sweet potatoes from the oven and let them cool.
  4. Peel the sweet potatoes and place them in a mixing bowl.
  5. Add brown sugar, butter, milk, vanilla extract, cinnamon, and nutmeg.
  6. Mash the mixture until smooth.
  7. Transfer the mixture to a baking dish.
  8. Top with mini marshmallows.
  9. Bake for an additional 15 minutes until marshmallows are golden brown.

Notes

  • Store leftovers in the fridge for up to 3 days.
  • Can be made a day in advance and reheated before serving.
