A guide to preparing Thanksgiving turkeys.

- 1 whole turkey (12–14 lbs)
- 1 cup unsalted butter, softened
- 2 tablespoons salt
- 1 tablespoon black pepper
- 1 tablespoon dried thyme
- 1 tablespoon dried rosemary
- 1 onion, quartered
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups chicken broth
Instructions
- Preheat your oven to 325°F (165°C).
- Remove the turkey giblets and pat the turkey dry with paper towels.
- Rub the softened butter all over the turkey.
- Season the turkey with salt, pepper, thyme, and rosemary.
- Stuff the cavity with onion, carrots, and celery.
- Place the turkey on a roasting rack in a roasting pan.
- Pour chicken broth into the bottom of the pan.
- Cover the turkey with foil and roast for 2.5 to 3 hours.
- Remove the foil and roast for an additional 30-60 minutes until the skin is golden brown.
- Check the internal temperature; it should reach 165°F (74°C).
- Let it rest for 20-30 minutes before carving.
Notes
- Brining the turkey overnight enhances flavor.
- Use a meat thermometer for accurate cooking.
- Save the bones for making stock.
