Ingredients
Scale
- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup chopped kale
- 1/2 cup cranberries
- 1/4 cup walnuts
- 2 tablespoons olive oil
- 1 tablespoon maple syrup
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 15 minutes.
- In a pan, heat olive oil and add kale. Cook until wilted.
- Add cranberries and walnuts to the pan. Stir for 2 minutes.
- Combine quinoa with the kale mixture.
- Drizzle with maple syrup. Season with salt and pepper.
- Serve warm.
Notes
- Can substitute quinoa with rice.
- Add other vegetables if desired.
- Adjust sweetness with more or less maple syrup.
