Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup chopped kale
  • 1/2 cup cranberries
  • 1/4 cup walnuts
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat and simmer for 15 minutes.
  4. In a pan, heat olive oil and add kale. Cook until wilted.
  5. Add cranberries and walnuts to the pan. Stir for 2 minutes.
  6. Combine quinoa with the kale mixture.
  7. Drizzle with maple syrup. Season with salt and pepper.
  8. Serve warm.

Notes

  • Can substitute quinoa with rice.
  • Add other vegetables if desired.
  • Adjust sweetness with more or less maple syrup.
