Ingredients
- Carrots – 2 cups, chopped
- Brussels sprouts – 2 cups, halved
- Sweet potatoes – 2 cups, cubed
- Red onion – 1 cup, sliced
- Olive oil – 3 tablespoons
- Salt – 1 teaspoon
- Pepper – 1/2 teaspoon
- Fresh thyme – 1 tablespoon, chopped
Instructions
- Preheat the oven to 425°F (220°C).
- Prepare the vegetables by chopping and slicing them as directed.
- In a large bowl, toss the vegetables with olive oil, salt, pepper, and thyme.
- Spread the vegetables evenly on a baking sheet.
- Roast for 25-30 minutes, stirring halfway through, until tender and caramelized.
- Remove from the oven and serve warm.
