Ingredients

- 3 cups of mixed vegetables (carrots, green beans, bell peppers)
- 2 cups of cooked quinoa
- 1 cup of vegetable broth
- 1 teaspoon of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- Salt and pepper to taste
- Fresh herbs (parsley, thyme) for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat.
- Add mixed vegetables and sauté for 5-7 minutes.
- Stir in cooked quinoa, vegetable broth, garlic powder, onion powder, salt, and pepper.
- Transfer the mixture to a baking dish.
- Bake for 20-25 minutes until heated through.
- Garnish with fresh herbs before serving.
