A delicious vegetarian main dish perfect for Thanksgiving.
Ingredients
Scale
- 2 cups of quinoa
- 4 cups of vegetable broth
- 1 cup of chopped mushrooms
- 1 cup of diced bell peppers
- 1 cup of chopped spinach
- 1/2 cup of chopped onions
- 2 cloves of garlic, minced
- 1 teaspoon of dried thyme
- 1 teaspoon of salt
- 1/2 teaspoon of pepper
- 1/4 cup of olive oil
Instructions
- Rinse the quinoa under cold water.
- In a pot, bring vegetable broth to a boil.
- Add quinoa and reduce heat to low. Cover and simmer for 15 minutes.
- In a skillet, heat olive oil over medium heat.
- Add onions and garlic, sauté until translucent.
- Add mushrooms and bell peppers, cook until soft.
- Add spinach and thyme, cook until wilted.
- Combine quinoa with the vegetable mixture.
- Season with salt and pepper, stir well.
- Serve warm.
Notes
- Can be made a day ahead and reheated.
- Substitute any vegetables based on preference.
- Great as a side dish or main course.
