Ingredients

  • 2 cloves of garlic, minced
  • 1 teaspoon of dried thyme
  • 1 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 1/4 cup of olive oil

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, bring vegetable broth to a boil.
  3. Add quinoa and reduce heat to low. Cover and simmer for 15 minutes.
  4. In a skillet, heat olive oil over medium heat.
  5. Add onions and garlic, sauté until translucent.
  6. Add mushrooms and bell peppers, cook until soft.
  7. Add spinach and thyme, cook until wilted.
  8. Combine quinoa with the vegetable mixture.
  9. Season with salt and pepper, stir well.
  10. Serve warm.
