A refreshing cold Spanish soup made with fresh vegetables.
Ingredients

- 6 ripe tomatoes, chopped
- 1 cucumber, peeled and diced
- 1 bell pepper, diced
- 1 small red onion, chopped
- 2 cloves garlic, minced
- 3 cups tomato juice
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- Salt to taste
- Pepper to taste
Instructions
- In a blender, combine tomatoes, cucumber, bell pepper, onion, and garlic.
- Blend until smooth.
- Add tomato juice, olive oil, vinegar, salt, and pepper.
- Blend again until well mixed.
- Chill in the refrigerator for at least 2 hours.
- Serve cold and enjoy.

- Use ripe tomatoes for the best flavor.
- Adjust seasoning to your taste.
- Garnish with diced vegetables if desired.
