A delicious tofu turkey recipe for Thanksgiving.


Ingredients

  • 1 block firm tofu (14 oz)
  • 1 cup vegetable broth
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon ground sage
  • 1/2 teaspoon black pepper
  • 1/4 cup nutritional yeast
  • 2 cups breadcrumbs
  • 1/2 cup chopped onions
  • 1/2 cup chopped celery
  • 1/2 cup chopped mushrooms

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Press the tofu to remove excess water.
  3. Crumble the tofu into a mixing bowl.
  4. Add vegetable broth, soy sauce, olive oil, garlic powder, onion powder, thyme, sage, pepper, nutritional yeast, onions, celery, and mushrooms.
  5. Mix until well combined.
  6. Add breadcrumbs and mix until the mixture holds together.
  7. Shape the mixture into a turkey form or place in a loaf pan.
  8. Bake for 45-50 minutes until golden brown.
  9. Let it cool for 10 minutes before slicing.

Notes

  • Serve with your favorite gravy.
  • Can be made a day in advance.
  • Store leftovers in an airtight container.
