Description

This is a traditional Greek dessert served during the New Year, known as Vasilopita.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 cup milk
  • 1/2 cup unsalted butter, softened
  • 4 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts
  • 1 coin (for good luck)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a round cake pan.
  3. In a bowl, mix flour and baking powder.
  4. In another bowl, cream butter and sugar.
  5. Add eggs one at a time, mixing well.
  6. Stir in milk and vanilla.
  7. Gradually add dry ingredients to wet ingredients.
  8. Fold in walnuts.
  9. Pour half the batter into the pan, place the coin, then cover with remaining batter.
  10. Bake for 40-45 minutes or until golden brown.
  11. Let cool before serving.

Notes

  • Store leftovers in an airtight container.
  • Serve with a cup of coffee or tea.
  • Decorate with powdered sugar before serving.
