  • 2 cups fresh cranberries
  • 1 cup orange juice
  • 1/2 cup sugar
  • 1 teaspoon orange zest
  • 1 pound fresh green beans
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Season the turkey breast with salt and pepper. Place it in a roasting pan.
  3. Roast the turkey for 1.5 to 2 hours or until the internal temperature reaches 165°F (74°C).
  4. In a saucepan, combine cranberries, orange juice, sugar, and orange zest. Cook over medium heat until the cranberries burst and the sauce thickens, about 15 minutes.
  5. Blanch the green beans in boiling water for 3 minutes, then transfer to an ice bath.
  6. In a skillet, heat olive oil and sauté the green beans for 5 minutes. Season with salt and pepper.
  7. Slice the turkey breast and serve with cranberry sauce and green beans.
