Description

Turkey taco stuffed sweet potatoes are a healthy and filling meal option. They combine the flavors of tacos with the nutrition of sweet potatoes.


Ingredients

  • 4 medium sweet potatoes
  • 1 lb ground turkey
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup shredded cheese
  • 1 avocado, diced
  • Fresh cilantro, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and poke holes in sweet potatoes. Bake for 45-60 minutes until tender.
  3. In a skillet, cook ground turkey over medium heat until browned.
  4. Add black beans, corn, and taco seasoning. Stir well and cook for 5 minutes.
  5. Stir in salsa and cook until heated through.
  6. Once sweet potatoes are done, slice them open and fluff the insides with a fork.
  7. Fill each sweet potato with the turkey mixture.
  8. Top with shredded cheese and diced avocado.
  9. Garnish with fresh cilantro before serving.
