- 4 medium sweet potatoes
- 1 lb ground turkey
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 packet taco seasoning
- 1 cup salsa
- 1 cup shredded cheese
- 1 avocado, diced
- Fresh cilantro, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and poke holes in sweet potatoes. Bake for 45-60 minutes until tender.
- In a skillet, cook ground turkey over medium heat until browned.
- Add black beans, corn, and taco seasoning. Stir well and cook for 5 minutes.
- Stir in salsa and cook until heated through.
- Once sweet potatoes are done, slice them open and fluff the insides with a fork.
- Fill each sweet potato with the turkey mixture.
- Top with shredded cheese and diced avocado.
- Garnish with fresh cilantro before serving.
