A simple and hearty Turkish lentil soup recipe.
Ingredients

- 1 cup red lentils
- 1 onion, chopped
- 2 carrots, diced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- 4 cups vegetable broth
- Salt, to taste
- Pepper, to taste
- Juice of 1 lemon
Instructions
- Rinse the lentils under cold water.
- In a pot, heat olive oil over medium heat.
- Add onions and carrots, sauté until soft.
- Add lentils, cumin, paprika, and stir.
- Pour in vegetable broth, bring to a boil.
- Reduce heat and simmer for 20-25 minutes.
- Puree the soup with an immersion blender for a smooth texture.
- Add salt, pepper, and lemon juice before serving.
