Ingredients

Instructions

  1. Rinse the lentils under cold water.
  2. In a pot, heat olive oil over medium heat.
  3. Add onions and carrots, sauté until soft.
  4. Add lentils, cumin, paprika, and stir.
  5. Pour in vegetable broth, bring to a boil.
  6. Reduce heat and simmer for 20-25 minutes.
  7. Puree the soup with an immersion blender for a smooth texture.
  8. Add salt, pepper, and lemon juice before serving.
